About the Book

We're delighted to show you around on what you will find in the book. We hope it will bring you creative kitchen adventures, new flavours, happy healthy body and most of all: we hope it brings you together with dear ones around a beautiful meal. Because good company is the cherry on the cake.

First and foremost you'll find our most cherished dishes at Mundekulla: More than 70 vegan and vegetarian recipes, both with variations to adjust the recipes to your preferences and diet. Beside the recipes you'll find inspirational chapters about the love for cooking, favourite flavour makers, how to design a buffet (or a meal!), farm-to-table, circular gastronomy and sustainable kitchen practices, a small history of Mundekulla and a sneak peak into the Swedish countryside beauty.

 

This book is great for people with a vegan or vegetarian lifestyle, and also for those who want to start exploring more plant-based diet. The focus is on genuinely good fresh, tasty food with lots of local ingredients, but flavours from all over the world. No haute cuisine, but just genuinely good food, with a special feel, made with love and care for the environment.

VEGAN AND VEGETARIAN YUMMINESS

We believe good food doesn’t have to be complicated. In fact, we believe the simplest foods can be the tastiest, warmest and closest to us. You don’t need to be an educated chef. All you need are your hands, your heart, your brain and your curiosity. And a kitchen comes in handy too. The most important ingredient however, you add yourself: it is the love and care you bring in preparing the meal. 

Why vegan and vegetarian? At Mundekulla we cook for people with different diets. We wish to make everyone equally happy! And the the wonderful thing is: that is possible! We focus on great flavours, freshness and nutrition. We always have a vegan base that is protein-rich and we have optional vegetarian sides. That is also our focus in this book. Most dishes are vegan and there are some vegetarian dishes that can easily be made fully plant-based as well  (we added variations and suggestions in the recipes).
